Adding lemon juice or vinegar keeps it white.
Pickled in sweetened vinegar, which keeps the bite.
Simmered then sieved, for a smooth and refined soup.
Baked with cheese, where it eats floury and soft.
White, tightly packed curds, heavy in the hand, with fresh green outer leaves.
Bag and refrigerate. It also freezes once boiled.
A variant of broccoli; the curd stays white because the leaves are tied over it to keep out the light. Its vitamin C survives cooking better than most. Orange, purple and pale green varieties exist, and the spiralled romanesco belongs to the same group.
