How to choose

Dense fine hairs and well-defined ridges. Oversized pods are tough.

Storage

Sensitive to cold. Wrap in newspaper and keep in the vegetable drawer. Use within two or three days.

Main areas

Good to know

Rubbing the hairs off with salt improves the texture. Cutting before boiling lets the viscosity run out, so boil the pods whole.
